Tip No.2 Perfect French or Freedom Fries
May 6th, 2006 by markdownmomYou can pick-up retro french fry cutters made of stainless steel by Ekco pictured below by bidding online at Ebay or by bargain hunting at thrift stores. A few will come intact with the regular cutting grid and a shoe string potato grid. Newer versions can be purchased at online sites listed by Yahoo.
However, to make really perfect fries, MDM has a key tip that Martha omitted from a recent show. After putting the peeled whole potato through the cutter, put the cut raw french fries in a bowl of cold or ice water for several minutes before frying. This will remove a lot of the starch, keep them from discoloring, and will make for a better fry by absorbing less oil. Drain each batch well before frying ( for good measure pat dry with paper toweling).
Once you have tried these you will never buy frozen again.
