  • Skoal to Scones for Holiday Festivities!

    Healthy and a wonderful alternative to the danish pastry or doughnut in the morning are scones.  Markdown Mom’s youngest daughter comes with her own version of a healthy and filling scone recipe.  Great idea for these cold December mornings or for a Holiday Brunch.

     

     

    Shalane’s Skoal Scones

    Wet Ingredients

    1 cup 2% Milk*

    2 Eggs

    Dry Ingredients

    3 ¾ Cups Self-Rising Flour

    ¼ Cup granulated sugar

    2 tspns. baking powder

    1-2 tspns. of  lemon zest

    Glaze

    ½ Cup Confectioners-Powder Sugar

    Juice from ½-1 lemon depending upon consistency desired

    * For reduce intake of fat can substitute fat free milk

    METHOD:  Combine flour, granulated sugar, baking powder.  Cut in butter to make a coarse crumb.  In a separate bowl beat eggs.  Mix eggs, milk, lemon zest with a whisk. 

     

     

     

     Add this mixture to the flour mixture and knead slightly, do not overwork. 

     

     

     

    Roll out into a rectangle aproximately 8″x14″ and cut into triangles.  Spray pan with Pam or other light vegetable oil.  Bake in oven at 400° for 8-10 minutes.  Remove and let cool.  Mix ingredients for glaze and drizzle over warm scones and serve.  Makes 12-18 scones.
