  • Quick and Easy Gourmet Dish for Hungry Guests

    Too busy to cook from scratch?  MDM suggests trying her daughter’s version of Shrimp Alfredo, which is not only delicious but for a gourmet treat, remarkably fast to fix, about 30-45 minutes. 

     

    Elise’s Easy and Quick Shrimp Alfredo

    Dry Ingredients

    1-16 oz. box of fettucine or linquine

    1 stick of unsalted butter

    ¼ tspn. black pepper

    1 clove of garlic, minced or diced

    2 Cups of shredded peccorino or parmesan reggiano Cheese

    16-20 Medium shrimp with tails [or as desired]

    1Tb. of flour

    Wet Ingredients

    1 Tb. of EVOO-extra virgin olive oil

    2 Cups of whole milk

    Method:  In a bowl, Take the shredded cheese and coat it with a tablespoon of flour.  This aids in making a creamy sauce, preventing separation that can occur with making cheese sauces. Next, take a saucepan and melt the unsalted butter.  

    While you are doing this, boil water that has been heavily salted and when water begins to boil, add your fettucine or linquine to be cooked al dente, drain and add a little olive oil to keep noodles from sticking together.

    In a large frying pan, sauté shrimp in the garlic and olive oil.  When shrimp is warmed through, usually turns pink, drain the olive oil with garlic ( or keep garlic for more flavor, but remove olive oil) from the pan.

    In the saucepan with the melted better, add the flour coated cheese stirring constantly with a whisk. In a separate saucepan warm the milk and when it is warmed, not boiling, add it slowly to the melting cheese mixing it constantly with the whisk, on a low flame.  When cheese is completely combined with the milk, add black pepper, and stir. 

    Combine all ingredients in the large frying pan: shrimp, cheese sauce, and noodles, stirring on low heat.  Transfer to either plates, or large serving bowl and garnish with parsley flakes.
