  • Press For Time? Try A Panini!

    Panini’s are relatively new in this country, the closest we came to this concept was a grilled cheese sandwich.  In fact, panini, an Italian sandwich, was not popular in Italy until the 1980’s at sandwich bars.  Panino refers to a small bread roll, and panini became Italy’s version of fast food.  At present, these sandwiches can be served cold or hot, although the cold version may resemble more the muffuletta--more about that later.

    Markdown Mom’s panini is traditional using ciabatta, a flat Italian bread, and some Italian cheeses like provolone, mozzarella, and proscuitto among its’ ingredients.  However, you can use other kind of meats,MDM used leftover slices from inside rolled roast beef with proscuitto,  cheese, tapénades (chopped olive mixture, capers,olive oil), and any artisan hard bread, or rye bread. 

    Markdown Mom’s Pressed For Time Panini

    Ingredients

    1 Loaf of Ciabatta Bread

    Roast Beef

    Proscuitto

    Provolone Cheese

    Mozzarella Cheese

    Olive Oil

    Garlic

    Options

    Olive Tapénade Filling

    Method:  1.  Slice the bread lengthwise in half.
                           2.  MDM coats the inside of each half with olive oil using a silicone brush.
                           3.  You can add minced garlic or roasted garlic spread on the inside of the bread.
                           4.  Layer ingredients, MDM  layered first with roast beef, then provolone slices, proscuitto,  &  mozarrella.
                           5.  In layering you can add the olive tapénade to the middle of the sandwich.
                           6.  Top with the other half of the bread and brush with olive oil on both sides.

     7.  Use a panini pan or grilling pan with/or without olive oil.  On the stove op, place the sandwich in the pan & weigh it   down with a "press" such as a bacon press, or another pan, etc.

    Makes about 4 sandwiches from one small ciabatta loaf.  Can be rewarmed by "zapping" it in the microwave.
