  • Onions: A Salt Free Substitute for A Party Sandwich Loaf

    Many years ago, MDM took a sandwich loaf course from a locally well-known caterer.  During the lesson, Helga gave several useful tips that MDM has used through the years. 

    Tip 1. Special Order Pullman Loaves.  For her sandwich loaves, she always ordered pullman loaves  from a bakery already sliced lengthwise in 3 to 4 sections.  Now you can purchase loaf pans and make your own, but for catering large parties, it is better to have your local bakery or bakery section of the grocery store supply them. 

    Tip 2. An Alternative to Salt.  If your fillings contain salt such as egg salad or tuna salad, an alternative is to dice very fine an onion.  The small electic mini food processors by Cuisinart and Black and Decker Handy Chopper Food Chopper ,which can be picked up sometimes at a thrifts shop or online at Amazon and others, make short work of this operation.  This is a healthy substitute for salt  in the fillings and for other recipes as well when salt is called for, for example deviled eggs.  Guests on a salt-free or restricted diet will be pleased at this alternative. Helga usually would make a "ham salad filling" by adding relish to bologna (make sure that the bologna is a brand name and not the most inexpensive, unless you can attest to its flavor and fat content), and Miracle Whip (Light is just as good). 

    Tip 3. Butter Bread Layers To Keep Fresh.  Alternate fillings with the sliced bread creating a layered cake look.  Be sure to butter each layer of bread since that will prevent the filling from being absorbed and making the bread soggy. 

    Tip 4. Frosting.  The entire loaf is frosted with a thin coat of cream cheese mixed with milk.  Beat the cream cheese and add the milk slowly  a Tablespoon at a time until you achieve the best spreading consistency.

    Tip 5. Decorate Loaf With Natural Edibles.   A pinwheel flower design on top of the loaf made from slivers of green pepper and radishes is lovely or use an edible flower such as nasturtiums.  This is where your culinary skill and imagination can go wild.  Wrap with nonstick plastic wrap and refrigerate.
