Olé Spanish Rice
November 5th, 2007 by markdownmom
As a family, we are always looking for recipes that are inexpensive, easy to make, versatile, and must meet the "oh, it’s so-o-o good" test! All members contribute and one of the special offerings of Markdown’s Mom’s husband, Dave, is his version of Spanish Rice. Now that the weather is getting colder, this dish can be used as a side dish, or it’s filling enough to be the main event. Basically, it is a one pan dish to fix.
Wet Ingredients 7-8 slices of bacon, fried and drained
½ bell pepper diced
½ white small onion diced
1 16 oz. can of stewed tomatoes
2 Tbspns. of worcestershire sauce
2 Cups of water
2 Tbspns. of brown sugar
1-2 pats of butter/margarine
Dry Ingredients
1½ tspns. salt1½ Cups of uncooked long grain white rice
black pepper to taste
Optional
3 oz-6oz. of tomato paste*

*MDM likes this dish without too much additional tomato paste so that the other flavors are not overwhelmed by the tomato. Also, you may want to let everyone flavor their helping with additional salt & pepper, as desired.
