  • Make Chocolates Like A Pro

    April 16th, 2006 by markdownmom

Besides good chocolate, chocolatieres and pastry chefs will tell you that  molds and tools such as a good pastry brush are essential elements in producing chocolate candy that is not only mouth-watering to eat, but to look at as well.  In a cursory search on the web, Markdown Mom found the following items for your consideration:

Chocolat- Chocolat, Inc.  Want to be a professional chocolatiere at home or for your family.  This site has the professional polycarbonate molds with mirrored images and fine lines.  Although it’s late for Easter this year, the Cadro molds have molds for the holidays and miscellaneous molds for all occasions.  Pricey, but these are molds that will last forever and can be passed on like the antique molds.  Markdown Mom especially liked the basket mold which is regularly priced at $49.95, now special at $25.76 U.S. dollars.

Kerekes Source of professional magnetic molds and chocolate tempering supplies and machines.  The mold pictured above is from their collection of european molds.  Good selection of pastry brushes and  supplies.

JBPrince Fun site since it carries artisan molds including large leaves, and more.  For the serious chocolatiere with professional carving sets, dvds, books, and supplies.

Cincinnati Cake and Candy Supplies  For inexpensive small to medium size 3D Chocolate Molds this is the place to go!  At-home chocolatieres have a wide choice from small multiple molds to more intricate, individual molds.  This supplier has a  large selection of molds to test your skills with an average price of $1.99.

Sur La Table.  Natural Boar Bristle pastry brushes.  Prices range from $9.95-$10.95 and are perfect for painting the chocolate into the 3D molds.

fantes.com Several selections of natural boar bristle pastry brushes ranging from $3.99 to $9.99.  Natural boar bristle pastry brushes are more pliable and hold liquids better than other brushes.
