  • Labor Day Gourmet Deli Salad

    For Labor Day and other holidays are a time when families can get together and recount the summer activities and plans for the rest of the year.  MDM like everyone else is looking for special dishes that are easy, transportable, and terrific for any potluck outing.  Here is our offering for a wonderful sweet and tasty chicken salad that is bound to be a crowd pleaser and reminiscent of those wonderful party salads of the bygone Vanderbilt and grand hotel era.

    MDM’s Labor Day Gourmet Deli Chicken, Cherry & Walnut Pasta Salad

    Dry Ingredients

    1-16oz. package of Gemelli Pasta

    1 Tbspn. Kosher Salt

    1 Cup walnuts chopped

    2 stalks of diced celery

    1-5oz pkg. or 2 Cups of Dried Cherries

    1-13oz. can of chunk chicken breast in water

    Wet Ingredients

    8 oz. of poppyseed dressing

    2 Tbspn. Mayonnaise

    METHOD:  Salt 4-6 qts. of water and bring to a boil for pasta.  Empty package of gemelli pasta into boiling water and cook until al dente, approx. 12-13 minutes.  When cooked, rinse pasta with cold water in a colander.  Chop celery, walnuts, and mix into cooled pasta.  Add whole dried cherries or if you desire slice in half to the pasta. Drain and break into smaller chunks the canned chicken and mix with the other ingredients. Chill ingredients.  Finally,combine poppyseed dressing and mayonnaise, if using  purchased poppyseed dressing, select one with a white color rather than a yellow, or ivory colored dressing; or use your homemade recipe for poppyseed dressing.  Add dressing right before serving.  Makes approx. 4 qt. bowl of salad.
