Healthy, Humble Hummus~A Mediterranean Gift

Hummus is one of the oldest prepared foods dating back thousands of years. Chickpeas were known to be cultivated in Mesopotamia, the Cradle of Civilization, and may have contributed to its’ rise. Each country that comprise the Mideast or Mediterranean area offer their own version of this dish with slight variations in garnishments and lentils. For this recipe, MDM used chickpeas and garnished with an olive tapénade. Hummus can be served as a dip, an appetizer, a spread, a dressing, or sandwich filling.
¾ C. dried chickpeas/ or garbanzo beans or fava beans for hummus ful
2 cloves roasted garlic
salt & pepper (white)
Wet Ingredients
2 Tbspn. olive oil
Juice from 2 lemons
2/3 Cup Tahini paste
Optional Garnishments
Olive tapénade
Pine nuts
Mint leaves
Cumin
Paprika
Parsley
Sumac
Method: 1. Soak chickpeas or beans overnight in cold water.
2. Drain, Rinse and put in pot.
3. Cover chickpeas or beans in pot with water and bring water to a boil.
4. Simmer until chickpeas or beans are soft.
5. Drain.
6. Drizzle garlic with olive oil, wrap in foil and roast in oven until soft, approx. 30-35 minutes at 400°

7. Purée chickpeas in a food processor or blender.
8. Add all wet ingredients
9. Garnish to taste. For those who like a spicey or hot taste, add cayenne pepper or paprika to taste.
10. Serve with cucumber slices, chips, flat bread, pita bread, etc.
