A Famous Mashed Potatoes Recipe

- Scrub and clean red potatoes in cold water.
- Cut potatoes in thick “potato chip” slices; approximately 4 slices per potato.
- Place potatoes in pot of water and boil until you can easily poke fork into slices.
- Peel skin off garlic cloves. The best way to do this is by placing a chef’s knife directly on top of the garlic clove and hitting the knife handle firmly down, this should be quick and strong, so that it hits your cutting surface.


5. Mince garlic so that it is fine.

6. Sauté garlic with butter for 1-2 minutes or until garlic cloves are translucent.
7. Mash red potatoes with a strong fork or potato masher. While you are doing this, warm milk in microwave for
1.5 minutes.
8. Slowly add milk to the mashed potatoes; stirring between milk pouring.
9. Add salt and the minced garlic and butter mix to the mashed potatoes and stir
ingredients in such that they are even throughout the mashed potatoes.
10. Serve immediately or keep in a warming tray until serving time.

MDM showed you one method of how to remove garlic skin from the clove; however, it can be messy. Dear MarkDownMom: Question: Is it okay to peel potatoes and leave them in water overnight? Thanks in advance, Roger
Dear Roger; Thanks for the inquiry. I really don’t see any advantages to leaving potatoes in water overnight and, in fact, it may be ill-advised. Cold water is used in this recipe and for french fries as well which removes some of the starch and creates a better tasting potato and fries. Leaving them overnight is not a time saver since immersion in cold water can be done a few minutes before actually cooking them. Additionally, overnight even in the refrigerator will turn your potatoes dark. In this recipe, you can save time by not peeling the red potatoes; in fact, that is what I do in preparing this dish. It is really a favorite with our friends and family. We will be adding more recipes of that nature, but just a hint, look for some recipes involving wild rice as most wild rice hot dishes increase in flavor and are really better warmed up.
